Healthy freezer fudge
Healthy Sweets!!
We all need a little "sweetness" in our life! Of course, we want to keep the sweets minimal, but what if they could be healthy? When I want a little something sweet, I reach for one of these babies!
Freezer Fudge
- 1 C sunflower butter (you can use any nut butter, but sunflower butter is low-ish oxalate)
- 1/4 C soft coconut oil (not low salicylate)
- 1 1/2 Tbs raw honey or maple syrup (maple syrup is low salicylate as well as low oxalate)
- 1 Tbsp cocoa butter (optional, but tasty)
- 1/2 tsp vanilla (not low salicylate)
- sprinkled sea salt
Gently melt the cocoa butter and coconut oil and let cool while mixing the rest of the ingredients together. Add oil mixture and mix until blended smooth. Line a square baking dish with parchment paper, fill with mixture, top with salt and freeze until solid. Remove, cut into squares then return to the container and store it in the freezer. Tasty little grab-able bites of goodness and protein!
